Procurement Recommendation
Sashimi-grade skipjack requires freezing at -20°C for ≥7 days (per FDA Fish & Fisheries Guidelines) to kill parasites, with histamine <50 ppm and K-value <20%. For canning, mercury levels must comply with FDA/EPA limits (<0.3 ppm); COA with ICP-MS testing is recommended. (for reference only)
